Caramel Apple Pancakes

INGREDIENTS

2 cups flour

1 tsp salt

2 tsp baking powder

1 tsp baking soda
1 tsp vanilla extract

2 eggs

1 ½ cups Maple Hill Creamery Vanilla Kefir
1 cup cinnamon apple sauce

2 tbsp Maple Hill Creamery Unsalted Butter
Caramel Apple Topping:
½ cup (1 stick) Maple Hill Creamery Unsalted Butter
3 apples, thinly sliced and peeled (if desired)
½ cup brown sugar
2 tbsp ground cinnamon
Pinch salt

PREPARATION

1. Make the caramel apple topping: in a medium saucepan over medium heat, add the butter, brown sugar, cinnamon and a pinch of salt. Cook until the sugar dissolves, then add the sliced apples.

2. Allow to cook for 7-10 minutes or until the apples are tender and the sauce has started to thicken. Remove from the heat.

3. Preheat griddle or frying pan over medium heat.

4. Meanwhile, make the batter: whisk together the dry ingredients. In a separate bowl, whisk together the wet (except the butter).

5. Add the wet to the dry mixture and stir until just combined. Fold in the butter. A few streaks of flour are ok—you don’t want to overmix the batter or the pancakes will not be fluffy. Batter will be thick, so for a thinner pancake you can add more kefir or water to thin.

6. Scoop batter onto griddle and flip as the tops begin to bubble.

7. Top pancakes with caramel apple topping and enjoy!
