Carrot Cake Cookies
INGREDIENTS
Cake Cookies
4 cups shredded carrots
1 1/2 cup almond/nut butter
1/2 cup almond/alternative flour
1/2 cup chopped walnuts
1/4 cup coconut sugar
1 egg
½ cup Maple Hill whole milk
2 tbsp. fresh orange zest or orange extract
2 tsp. cinnamon
1 tsp. nutmeg
1 1/2 tsp. baking powder
1 tsp. vanilla extract
Cream Cheese Icing
1 cup cream cheese @room temp
¼ butter @ room temp
1 tsp vanilla extract
2 tbsp. Maple Hill Whole Milk
1-2 tbsp. coconut sugar
PREPARATION
Instructions
Preheat oven 350 degrees
Grease a cookie tray or line with parchment paper
Combine all ingredients for cake cookies in a bowl (it will be a gooey consistency)
Scoop 1 heaping tbsp. of batter into your hand and shape the batter into a gooey ball and place on the cookie sheet at least 1 ½ in. apart
Bake 30-40 mins, until completely cooked through.
While cake cookies bake, combine icing ingredients and blend/whip by hand or mixer
Let cake cookies cool and ice each cookie (optional: sprinkle coconut sugar on each cookie after icing).
Serve at room temp for a softer icing or store in the fridge and serve cool for a harder icing.
