Savory Mediterranean Greek Yogurt Bowl
INGREDIENTS
Ingredients:
16 oz container of Maple Hill Plain Greek Yogurt
1/3 cup of olives, pitted and sliced
1/2 of 1 cucumber, sliced
1 pint sun gold tomatoes
1 tbsp extra virgin olive oil, plus more for topping
Zaa’tar, for topping
Sea salt, for topping
Crusty bread, for serving

PREPARATION
Instructions:
Start by slightly blistering the sun gold tomatoes: heat 1 tbsp extra virgin olive oil in a medium pan over medium-high heat, then add the tomatoes and season with salt. Cover and leave undisturbed for 2 minutes, then stir and cook for an additional few minutes until the tomatoes begin to blister. Remove from the pan and set aside.
To a shallow bowl, spread the Greek yogurt into an even layer. Then add the tomatoes, olives, and cucumbers on top.
Drizzle with extra virgin olive oil and sprinkle sea salt and Zaa’tar on top. Serve with crusty bread and/or your favorite crackers. Enjoy!
