Blackened Chicken Pitas + Homemade Tzatziki

INGREDIENTS

Ingredients:

  • Pita bread

  • Shredded lettuce

Tzatziki

  • 16 oz Maple Hill Creamery Plain Greek Yogurt

  • 2 cups grated cucumber (about 1 large cucumber)

  • 3 tbsp extra virgin olive oil

  • 3 tbsp fresh dill, chopped

  • 2 tbsp fresh mint, chopped

  • 1 tbsp fresh lemon juice

  • 1 clove garlic, grated

  • Salt, to taste

Blackened Chicken

  • 1.5 lbs. chicken tenderloins, cubed

  • 3 tbsp Maple Hill Creamery Unsalted Butter

  • 1-2 tbsp extra virgin olive oil

  • 2 tbsp blackening seasoning (more as desired)

PREPARATION

  1. Preheat oven to 425F.

  2. Added cubed chicken to a 9x13 pan and drizzle with olive oil and blackening seasoning. Toss to combine so that each piece of chicken is fully coated. Add pads of Maple Hill Creamery Unsalted Butter to the top. Bake for 12-15 minutes or until the internal temperature of the chicken reaches 165F. Broil for 2-3 minutes for extra crispiness.

  3. Meanwhile make the tzatziki: Add all ingredients to a large bowl and mix to combine.

  4. Once the chicken is cooked, serve with lettuce, homemade tzatziki, and fresh pita. Enjoy!
