Broccoli Cheddar Frittata

INGREDIENTS

10 large eggs
2 cups broccoli, chopped
½ white onion, diced
1 tsp Dijon mustard
1 tsp salt
1/2 tsp black pepper
1/4 tsp garlic powder
1 cup Plain Maple Hill Greek Yogurt
2 tbsp unsalted Maple Hill Butter
1 cup sharp cheddar cheese, shredded

PREPARATION

1. Preheat oven to 425F.
2. Melt the butter in a 10” ovenproof skillet over medium heat. Add onion, broccoli and a pinch of salt and cook until the onion is translucent, about 3-5 minutes.
3. In a large bowl, whisk together the eggs, Greek yogurt, Dijon mustard, and spices. Pour mixture into the pan, then sprinkle with cheese.
4. Bake until the center is just set, 12-15 minutes. Allow to rest a few minutes before serving, may slide the frittata onto a serving plate or serve directly from the skillet. Enjoy!
