Creamy Sausage Tortellini Soup
INGREDIENTS
16 oz bag of premade tortellini
1 lb. hot Italian sausage
3 carrots, peeled and chopped
3 stalks celery, chopped
1 yellow onion, chopped
5 cloves garlic, minced
4 cups chicken stock
1 cup Maple Hill Whole Milk
14 oz can peeled tomatoes
2 tbsp Maple Hill Unsalted Butter
1 tsp Italian seasoning
Salt and pepper, to taste
½ bunch kale, finely chopped
Salt and pepper, to taste
Parmesan cheese, for serving

PREPARATION
Instructions
Heat a large pot over medium high heat and cook the sausage. Break up with a wooden spoon into smaller pieces (about 5 minutes). Remove from the pot and set aside.
To the same pot, add the butter over medium heat. Once melted, add the onion, carrots, celery, garlic, generous pinch of salt and Italian seasoning. Cook for 5 minutes.
Add tomatoes and chicken broth. Let simmer for 20 minutes, then turn off the heat. Using an immersion blender, blend the soup into a smooth consistency. Add salt accordingly. Turn the heat back on and bring to a gentle boil. Add the sausage, tortellini, and milk.
Top with parmesan cheese and enjoy!
